There is no horse in the scriptures about Paul's experience.

It is just odd to me that so many paintings show a horse and there was none. Nothing about you.

Well, there could have been a horse. The horse does not have to have been mentioned in order to have been there. There is no place in scripture that speaks about Jesus laughing, either, but he probably did. Often.
